Fraserton, Missouri, population under 10,000, is the county seat of fictional, rural Fraser County, somewhere deep in the Ozarks.  It is home to Constancy Stafford; her great-grandmother, Amanda Casey; Gram's best friend, Irma West; and Irish-born police officer, Danny Egan, who plays fiddle and quotes Bible with equal ease and sincerity.

GRAM'S PIES

GRAM'S FRESH STRAWBERRY PIE

  1 baked pie crust
  1 quart strawberries, hulled and washed
   (slice if they are large)

  For glaze:
  3 Tbsp. strawberry-flavored gelatin
  3 Tbsp. cornstarch
  1 cup sugar
  1 cup water

 Combine gelatin, cornstarch and sugar.
 Add water, stir until well blended.  Cook
 over medium heat, stirring constantly, until
 mixture comes to a boil.  Boil one minute.
 Remove from heat and cool to room
 tempature.  Do NOT
 refrigerate at this point.

 When glaze is cool, brush a thin coat over
 crust.  Arrange strawberries in crust.
 Spoon glaze over berries, making sure all
 berries on top are coated.

 Refrigerate for at least two hours or until
 glaze is set.  Serve with whipped cream.

GRAM'S PUMPKIN PIE

 Mix ingredients in order given and beat well:
 2 eggs, slightly beaten
 2 c. home-processed (or 1 16-oz can)
      pumpkin
 ¾ c. sugar
 ½ t. salt
 1 ½ t. cinnamon
 ½ t. ginger
 ¼ t. allspice
 1 12-oz can evaporated milk

 Pour into 10" unbaked crust, bake 450°
 for 15 minutes, reduce heat to 350°, bake
 an additional  30 to 45 minutes, until knife
 inserted in middle comes out clean.
